Roasted meatballs with sweet potatoes

    minced beef

    eggs, separated

    cloves
    garlic
  • 2
    courgettes, grated
  • 1
    carrot, grated
  • 2
    tsp
    ground cumin
  • 2

    ground coriander

    Tbs
    paprika
  • sallt and black pepper to taste
  • 1/4
    cup
    breadcrumbs
  • 3
    sweet potatoes, cut into chunks
  • 1
    Tbs
    olive oil
  • 1
    Tbs
    fresh thyme
  • tzatziki, to serve
 

Method

Preheat the oven to 200C. Combine the mince, eggs, courgette, carrots, cumin, coriander, paprika, seasoning and breadcrumbs well, then shape into 8 meatballs. Place meatballs onto a greased oven tray, then arrange the sweet potatoes around the meatballs. Drizzle with olive oil, then sprinkle with thyme. Roast for 25 minutes until the meatballs are cooked through and the sweet potato is tender. Serve with tzatziki.
