Brinjal spread (baba ghanoush)

    large brinjals, sliced
  • 2
    garlic cloves
  • 1
    zest of large lemon
  • 45
    ml
    olive oil
  • 10
    ml
    tahini (sesame seed) paste
  • 125
    ml
    chopped fresh parsley
  • 60
    ml
    chopped fresh mint
  • 60
    ml
    Greek yoghurt
  • 10
    ml
    honey salt and freshly ground black pepper
 

Method

5-8 minutes
 

Serve with toasted pita bread.

1. Steam the brinjal slices in a colander over a saucepan with boiling water for 5 minutes or in the microwave oven in a steamer until just soft. Set aside to cool.

2. Blitz the brinjals and remaining ingredients in a food processor until smooth.

3. Season with salt and pepper and serve with toasted pitta bread.
