Ingredients (8)

8 sausages — Eskort Gold Medal Pork Sausages
60 ml fresh chillies — 573
1 onion — finely chopped
250 ml mushrooms
15 ml thyme — or oregano, chopped
2 tinned tomatoes — chopped
400 g butter beans — or borlotti beans, tinned
sea salt and freshly ground black pepper

Method:

Preheat oven to 180ºC.

In a heavy based frying pan, heat 15 ml oil and lightly brown sausages then remove and set aside.
Wipe out pan and add remaining oil.
Sauté onion and thyme over gentle heat for 5 minutes until soft but not coloured.
Add mushrooms and cook for a further 2 – 3 minutes then add tomatoes and simmer for 5 min, stirring occasionally.
Season to taste.

Transfer tomato mixture into an ovenproof dish, stir in the beans then arrange the sausages on top, burying them into the mixture.
Roast for 15 – 20 minutes and serve with creamy mash and salad.
