Heat the oil in a heavy-bottomed saucepan and fry the sausages over medium heat until browned. Remove and fry the garlic, onion and carrot in the same pot for 3 minutes until glossy.
Add the chopped tomatoes, pork sausages, sweet peppers and butternut. Simmer for 25 to 30 minutes, until the butternut is soft and the sausages are cooked through. Season to taste with salt and pepper. Stir in the olives and capers, and serve on creamy mashed potatoes. Garnish with torn sweet basil leaves as an option.
