Ingredients (8)

4 bacon — streaky rashers
1 bread — crusty rolls
1 onion — finely chopped
red pepper — halved, sliced
yellow pepper — sliced
250 g chicken livers
Tabasco sauce
sea salt and freshly ground black pepper

Method:

Halve and butter the roll.
In a frying pan, cook the bacon until crispy, remove and then drain oil from the pan leaving 15 ml of the oil.
Sauté the onion until softened, add peppers and cook for 2 min.
Add the chicken livers with Tabasco sauce.
Season and cook livers for 6 – 8 min until cooked through.
Pile onto the half roll and top with crispy bacon.
Add avocado slices and/or rocket leaves.
