Gluten and sugar-free peanut butter almond cookies

Ingredients (7)

1 cup sugar free peanut butter
20 g sugar — substitute
1 tsp vanilla
1 eggs — beaten
1/2 tsp Bicarbonate of soda
1/2 cup almond flour
salt — pinch

Method:

Preheat oven to 190 °C.

Grease, oil, or spray a cookie sheet lightly.

Mix all the ingredients together. Magically, the mixture will ‘set’ a bit which allows you to scoop it out with a spoon and roll it into balls. Press down with a fork and bake +- 12 – 14 Minutes.

Cool on the cookie sheet for a few minutes before removing; the cookies are a bit fragile until cooled.

Note: Don’t have almond flour, just whiz 1/2 cup of almond flakes in your food processor or use a mortar and pestle to crush them.
