Coconut prawn stir-fry

Ingredients

  • 600-800
    g
    prawns, shelled and deveined
  • salt and freshly ground peppe
  • 15
    ml
    olive oil
  • 5
    ml
    butter
  • stir-fry kit 3, removed from plastic bag and thawed in a strainer
  • coconut sweet chilli sauce
  • 50
    g
    cashew nuts, roughly chopped
  • 1
    lime, cut into wedges
 

Method

15-20 MIN
 

1 Season the prawns with salt and pepper, heat the oil and butter in a wok or large pan and fry the prawns in batches until browned. Remove and set aside.

2 Add the vegetables to the same pan, stirfry for about 3-5 minutes. Pour in the sauce, return the prawns to the pan and stir-fry for a further 3-5 minutes.

3 TO SERVE

Spoon over the rice, sprinkle the nuts on top and serve with a wedge
