Polenta pap

Ingredients

  • 4x250
    ml
    water salt
  • 4x250
    ml
    polenta
  • 1
    can whole-kernel sweetcorn, drained
  • SPINACH AND TOMATO MIX
  • 15
    ml
    oil
  • 1
    onion, chopped
  • 2
    garlic cloves, chopped
  • 2
    cans chopped tomatoes
  • 15-30
    sugar
  • 15
    ml
    smoked paprika
  • Pinch of chilli powder salt and pepper
  • 300
    g
    spinach, roughly chopped
 

Method

40-45 minutes
 

1. Bring the water to the boil and add a pinch of salt. Gradually add the polenta, stirring continuously with a fork until the mixture becomes crumbly.

2. Reduce the heat, cover and cook for another 35-40 minutes. Stir with a fork.

3. Add the corn and mix well.

4. Spinach and tomato mix Heat the oil and fry the onion and garlic until fragrant. Add the tomatoes, sugar and spices, and simmer for 1 minute.  Season with salt and freshly ground black pepper.

5. Add the spinach and stir-fry until wilted. Serve with the polenta.
