  • DOUGH
  • 250
    ml
    cake flour
  • 5
    ml
    baking powder
  • 1
    ml
    salt
  • 1
    egg, unbeaten
  • 125-150
    ml
    cold water extra cake flour MILK MIXTURE
  • 2
    l
    milk
  • 3
    sticks cinnamon
  • 1
    strip of dried orange peel
  • 60
    ml
    sugar
  • 2
    ml
    ground cinnamon TO GARNISH cinnamon sugar
 

Method

30 minutes
 

1. Dough Sift the flour, baking powder and salt into a mixing bowl. Add the egg and mix using a wooden spoon. Add just enough cold water to form a soft dough.

2. Roll out the dough until very thin. Sprinkle with flour.

3. Roll up the dough and cut into very thin slices. Separate the slices using your fingers. Mix the slices with flour until lightly coated. Cover with a damp cloth and set aside.

4. Milk mixture Heat the milk with the cinnamon sticks and peel over low heat until it just comes to the boil. Add the strips of dough in batches and stir through. Simmer until the milk thickens and the dough is cooked.

5. Beat the egg yolks, sugar and ground cinnamon. Add a little dough mixture to the egg mixture, then add the egg mixture to the dough. Cook through, stirring continuously.

6. Whisk the egg whites until stiff and fold into the mixture. Ladle the mixture into bowls and sprinkle with cinnamon sugar
