Corn and spinach samoosas


CORN AND SPINACH SAMOOSAS

    onions, finely chopped
  • 300
    g
    spinach, washed, drained and finely chopped
  • 500
    ml
    grated mozzarella chees
  • 1
    round feta cheese, crumbled
  • 2
    can
    whole kernel corn, drained
  • salt and freshly ground pepper
  • SAMOOSAS
  • 500
    g
    samoosa pastry
  • 1
    egg, whisked
  • oil for deep-frying
  • lime or lemon wedges
 

Method

1 FILLING Mix the onions, spinach, cheeses and corn, and season with salt and freshly ground pepper.

 2 SAMOOSAS Put a spoonful of filling at one end of a strip of pastry. Fold the pastry over the filling to form a triangle and continue folding the triangle over until the end of the pastry strip. Brush the edge with egg and seal. Repeat until all the filling has been used. Refrigerate until needed.

 3 Heat the oil and deep fry the samoosas in batches until golden brown. Drain on paper towels and serve with lime or lemon wedges
