Baked amasi chicken with lemon and rosemary

Ingredients

    chicken pieces
  • 500
    ml
    amasi
  • 4
    garlic cloves, bruised
  • 2
    onions, cut into quarters
  • juice and grated zest of 1 lemon
  • 30
    ml
    chicken spice mix
  • 4
    rosemary sprigs
  • 30
    ml
    olive oil
  • lemon slices or wedges
 

Method

45-60 min
 

Grease an ovenproof dish with non-stick spray.

1. Put the chicken, amasi, garlic and onions in a marinating dish. Mix well and leave to marinate overnight.

2. Preheat the oven to 180°C. Remove the chicken, onion and garlic from the marinade and arrange in the oven-proof dish.

3. Season the chicken with the lemon juice, zest and spice mix. Tuck the rosemary between the chicken pieces and drizzle the oil over.

4. Bake for 45-60 minutes or until golden brown and done. Serve with lemon slices or wedges.
