Ingredients (12)

4 cup flour — cake
375 ml sugar — or caster sugar
1 tsp cinnamon — ground
1 tsp ginger — ground
5 ml cloves — ground
1/2 tsp salt
1 cup butter
1/4 cup cooking fat — or butter
1 tsp Bicarbonate of soda
30 ml water — luke warm
1 eggs — beaten
cinnamon sugar — for dusting

Method:

* Ideally, you should make the dough the day before and let it stand overnight.

Preheat the oven to 200°C.

Sift the flour, salt and spices together. Add the sugar.
Rub in the butter and fat until the mixture resembles breadcrumbs.
Dissolve the bicarbonate soda in the water and add to the beaten egg.
Add the egg mixture to the flour mixture to make a dough. Knead until thoroughly mixed. * Leave to stand overnight.

Roll out the dough on a lightly floured surface to a thickness of 5 mm.
Cut out rounds with cookie cutter and stamp a message on with cookie stamp.
Place on a greased baking tray and bake for 10 minutes.
Place biscuits on a wire rack, sprinkle immediately with some cinnamon sugar and cool.
