Ingredients (6)

500 ml rosé wine
375 ml castor sugar
60 ml cordial — lime
1/2 melon — winter
1/2 melon — spanspek
1/2 watermelon

Method:

1 Pour the wine into a saucepan and add the sugar and cordial.

2 Heat gently, stirring, until the sugar dissolves. Remove from the heat, transfer the liquid to a large bowl and chill for 2 hours.

3 Add the melons (sliced or cut into shapes of your choice) to the chilled soup. Ladle the soup into six shallow bowls.
