Tomato soup with mini herb scones

Ingredients

    olive oil
  • 2
    onions, chopped
  • 2
    garlic cloves, crushed
  • 1
    can, tomato paste
  • 2
    can, chopped tomatoes
  • 1
    can, tomato purée
  • 500
    ml
    vegetable stock
  • 5-10
    ml
    smoked paprika
  • 60
    ml
    sugar salt and freshly ground black pepper
  • SCONES
  • 4x250
    ml
    cake flour
  • 20
    ml
    baking powder pinch of salt handful of fresh basil, torn into pieces
  • 500
    ml
    milk
  • 60
    ml
    oil paprika for sprinkling on top
 

Method

12 minutes
 

1. Soup microwave the oil, onions and garlic in a glass bowl for 5 minutes. Add the remaining ingredients except salt and pepper, stir and micro wave for 5 minutes. Season with salt and pepper.

2. Scones sift together the dry ingredients in a separate bowl and add the basil. Mix the milk and oil and add to the bowl. Mix until just blended.

3. roll the dough into small balls and press into small bowls or jars. Sprinkle with paprika and microwave for 2 minutes or until done.

4. Spoon soup servings into containers or bags and freeze.

5. put a few scones in separate freezer bags and freeze.
