Spiced carrot soup

    each butter and sunflower oil

    small onion, finely chopped
  • 1
    clove of garlic, crushed
  • 5
    grated ginger

    peeled carrots, grated
  • 5
    ground cumin
  • 15
    garam masala
  • 750
    vegetable stock
  • 250
    red lentils
  • toasted bread, to serve


Heat the butter and oil in a large saucepan. Sauté the onion until soft. Add the garlic and ginger and sauté for another minute. Add the carrots and sauté for another three minutes. Add the cumin and garam masala and fry for a minute or two, until fragrant.

Add the vegetable stock and lentils and bring to the boil. Boil for two minutes, then reduce the heat, cover and simmer for 35 minutes. Stir occasionally to prevent it burning. Once the lentils are cooked, blend until smooth with a hand blender. Season to taste and serve with toasted bread.
