Chicken, vegetable and noodle soup

    olive oil
  • 2
    garlic cloves, finely chopped
  • 2
    birds eye chilli, finely chopped
  • 1
    onion, chopped
  • 2
    sticks of celery, chopped
  • 2 – 3 cups good quality chicken stock
  • 2
    chicken breast fillets, cut into chunks
  • 2
    carrots, peeled and chopped
  • 1
    chopped baby marrow and patty pans
  • 2
    portions angel hair pasta
  • handful of chopped parsley
  • black pepper to season



First off, heat the olive oil in a large pot and saute the garlic, chilli, onion and celery for a few minutes until soft.

Add the chicken stock to the pot, bring to a boil and add the chicken and vegetables. Cook for about 20 minutes until the chicken is cooked through and the vegetables tender.

Add the angel hair pasta, cook for another three minutes until the pasta is cooked.

Remove from heat, add the herbs and black pepper. Serve with crusty bread.
