Pea soup with bacon

Ingredients (8)

125 g bacon — streaky, chopped
30 ml butter
1 onion — chopped
500 ml stock — vegetable
500 g peas — frozen
100 ml milk — or cream
1 ml nutmeg — ground
bread — fresh, to serve

Method:

Grill half of the bacon under a hot grill until it is crisp. Set aside to be used as a garnish.

Melt the butter in a large saucepan. Add the onion and fry until soft. Add the remaining bacon and fry for two minutes.

Add the vegetable stock and bring to the boil, then add the peas and boil for about five minutes, or until the peas are just cooked.

Remove from the heat and leave to cool slightly, then blend in a liquidiser or with a hand blender until smooth. Add the milk or cream and the nutmeg and return to the heat until heated through. Season. Serve with crispy bacon and fresh bread.
