Ingredients (17)

15 ml butter
1 onion — chopped
4 tuna — tinned (in brine), drained
6 fresh white bread — Sliced and soaked in milk until soft
200 ml milk
5 ml garlic and ginger paste
10 ml masala or roasted curry powder
5 ml turmeric
5 ml dried mixed herbs salt and freshly ground black pepper
30 ml lemon juice
60 ml brown sugar handful of fresh parsley, chopped pinch of nutmeg
TOPPING
4 bay leaves
100 g almonds — flaked
300 ml milk
2 eggs
salt — just a pinch
5 ml cornflour

Method:

Use canned tuna to
make this easy bobotie.

1. Preheat the oven to 180 °C. Grease two ovenproof dishes.

2. Heat the butter and sauté the onion until soft.

3. Mix the onion with the remaining ingredients and spoon the
mixture into the dishes, spreading it evenly.

4. Topping. Add the
bay leaves to the dishes and scatter the almonds on top.

5. Whisk together the milk, eggs, salt and cornflour and pour
over the bobotie. Bake for 30-40 minutes or until the top is golden. Cool,
cover and freeze.
