Ingredients

    2 cans of tuna in brine, drained
  • 400
    g
    1 can of cannellini beans, washed and drained
  • 125
    ml
    mayonnaise
  • 1 avocado
  • zest and juice of 1 lemon
  • salt and freshly ground pepper
  • low-GI wholewheat bread
 

Method

 

1 Put all the ingredients in a large bowl.

2 Using a fork or potato masher, roughly mash the ingredients together.

3 To serve Spread the tuna mixture between two slices of bread, cut the sandwich in half and pop into your lunchbox.
