Spicy pork with glass noodles and mint

Ingredients (19)

150 g glass noodles
SPICY PORK:
1 oil
500 g pork mince
3 garlic — cloves, minced
5 cm fresh ginger — grated
2 lemon grass — stalks, pounded
2 fish sauce
2 tsp brown sugar
2 fresh coriander — chopped
10 g fresh mint
5 g fresh coriander
2 red chillies — chopped
50 g peanuts — unsalted, chopped
1 spring onions — chopped
2 limes — zest and juice
DRESSING:
2 sesame oil
1 tsp soy sauce
1 sugar
limes — juice only and extra to garnish

Method:

Heat the oil in a large frying pan, add pork mince and fry until golden brown, remove from the pan, add the garlic, ginger, and lemon grass to the pan, and sauté for 1 minute, return the mince to the pan and stir through the fish sauce, lime juice and zest, brown sugar and chopped coriander. Cook for 2–3 minutes; remove from heat.

For the dressing:
Whisk together ingredients.

To assemble:
Place noodles on a platter, top with mince and stir to combine, drizzle with dressing, scatter over mint, coriander, red chillies, peanuts, and spring onion. Serve with extra limes.
