    oil
  • 3 large leeks, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 5

    chopped fresh sage
  • 60

    flour
  • 500
    ml
    chicken stock
  • 500
    ml
    milk
  • 800
    g
    potatoes, peeled and diced
  • 500
    ml
    corn
  • 10
    ml
    smoked paprika
  • 250
    g
    bacon, diced and fried
  • salt and freshly ground pepper
  • coriander to garnish
 

Method

1 Heat the oil in a large saucepan over medium heat. Add the leeks,carrots and celery and cook for about 8-10 minutes or until tender.

2 Add the garlic, sage and flour and cook until the flour is lightly browned.3 Slowly stir in the stock,deglazing the pan.

4 Add the milk and potatoes and bring to the boil.

5 Reduce the heat and simmer for about 30 minutes or until the potatoes are soft but not mushy.6 Add the corn, paprika and bacon and cook until heated. Season with salt and pepper. Garnish with the coriander.
