Salami baguette with bean paste

    g
    butter beans, drained
  • 60
    ml
    olive oil
  • 30
    ml
    lemon juice salt
  • 4-6
    salami slices
  • 100
    g
    mozzarella, sliced
  • handful fresh basil leaves
  • handful mixed salad greens
 

Method

 

BEAN PASTE

Pulse the beans in a food processor until roughly chopped. Switch the food processor on again and slowly add the olive oil. Pulse until smooth. Add the lemon juice and season with salt.

BAGUETTE

Slice the baguette lengthwise in half and spread the bean paste on both halves.

Make a sandwich with the salami, mozzarella, basil and salad greens. Cut the sandwich into two portions (or keep whole if preferred) and serve.
