    deboned shoulder of pork or neck, cubed

    red wine

    apple cider
  • 750

    piece of fresh ginger, peeled and grated

    green apple, grated

    oyster sauce

    soy sauce

    brown sugar TO SERVE salt and freshly ground pepper toasted rye bread or mashed potatoes

    apple or apple salad
 

Method

40-45 minutes
 

This is a clever way to create a juicy dish from a tough piece of meat.

1. Meat mix the ingredients in a microwave-proof glass bowl. Cover with clingfilm and pierce it a few times. Microwave for 40-45 minutes, stirring at 15-minute intervals, until the meat is tender and can be shredded.

2. remove the meat from the cooking liquid and shred using two forks. Mix with the cooking liquid.

3. To serve Season the meat with salt and pepper and serve on toasted rye bread with a slice of apple. Or serve the meat with mash and apple salad.
