Kassler chops with caramelised apples and parsnips

Ingredients (14)

700 g pork — kassler chops
2 Tbs sunflower oil
4 shallots — halved
3 cloves garlic — cloves, chopped
3 cloves
100 ml sherry
1 cup split peas — green
3 cup stock — chicken
sea salt and freshly ground black pepper
CARAMELISED APPLES AND PARSNIPS:
100 g butter
2 Tbs honey
6 parsnips — small, peeled
2 apples — sliced

Method:

Preheat oven to 180°C. Heat oil in a pot, brown kassler then set aside.

Add shallots and garlic to the pot and allow to brown. Deglaze with the sherry then return kassler to the pot. Add split peas and stock. Bring to the boil, reduce heat and simmer for 1 hour. Season.

Melt the butter and honey in a small pot until a rich caramel forms. Arrange parsnips and apples in a baking dish and pour over caramel ensuring an even coating. Sprinkle with salt. Bake for 20 minutes or until the fruit and vegetables are cooked through and golden brown.
