Curried eisbein

    pickled eisbein, cut into pieces
  • 45-60
    ml
    Thai green curry paste
  • 30
    ml
    oil
  • 2
    onions, sliced
  • 1
    can, coconut milk
  • 500
    ml
    chicken stock
  • 1
    cinnamon stick soy sauce
  • 60
    ml
    chopped fresh coriander basmati rice to serve
 

Method

1½-2 hours
 

Using eisbein shortens the cooking time as the pork shank is already salted and/or smoked.

1. Brush the eisbein pieces with the curry paste. Heat the oil in a saucepan and brown the meat.

2. add the onions, coconut milk, stock and cinnamon, cover and simmer for 1-2 hours or until the meat is tender. Season with soy sauce and mix in the coriander (keep a little for garnish).

3. Serve with basmati rice and garnish with coriander.
