Chorizo-bacon and melon kebabs

Ingredients

    bacon rashers
  • 2
    garlic cloves, crushed
  • 5
    ml
    cumin seeds
  • 2
    red chillies, chopped
  • 2,5
    ml
    ground coriander
  • 15
    ml
    smoked paprika
  • 1
    large melon, peeled and cubed
  • 20
    g
    fresh basil
 

Method

Preheat the oven to 200°C. Line a baking sheet with foil and grease with nonstick spray.

1 CHORIZOBACON

Mix the ingredients well, making sure you cover the bacon all over with the seasoning.

2 Arrange the bacon in a single layer on the prepared baking sheet and grill for 10-12 minutes or until done and slightly crispy at the edges. Remove from the baking sheet and allow to cool completely. Roll up each bacon rasher.

3 ASSEMBLY

Thread the melon cubes, bacon rolls and basil onto kebab skewers and serve.
