Bacon and green bean parcels

Ingredients

    g
    green beans
  • 250
    g
    bacon rashers
  • freshly ground pepper
  • 30
    ml
    olive oil
  • CROSTINI
  • 4-8
    slices rye bread
  • 30
    ml
    olive oil
  • salt and freshly ground pepper
  • TO SERVE
  • 4
    eggs, boiled and shelled
 

Method

15 min
 

Preheat the oven  to 230 °C. Grease a  baking sheet with nonstick spray.

1. Top and tail the beans and divide into 8 piles.

2. Wrap bacon rashers around each pile of green beans to make parcels.

3. Arrange on the prepared baking sheet, season with freshly ground pepper and drizzle the olive oil over.

4. Bake for 15 minutes or until the bacon is golden brown and the ends of the green beans start to change colour.

5. Crostini Arrange the rye bread on a baking sheet and drizzle the olive oil over.

6. Season with salt and freshly ground pepper and bake for 5 minutes or until golden brown.

7. To serve Halve the boiled eggs. Serve the green bean parcels with the eggs and  crostini.
