    ml
    soy sauce
  • 125
    ml
    rice vinegar or apple cider vinegar
  • 6-8 garlic cloves, crushedc
  • 1 onion, chopped
  • 60

    castor sugar
  • 80
    ml
    oil
  • 4 pork neck steaks, cut into strips
  • salt and freshly ground pepper
  • oil for shallow frying
  • 180
    ml
    rice or apple cider vinegar
  • 180
    ml
    warm water
  • 125
    ml
    castor sugar
  • 6 peppercorns
  • 2-3 red onions or 12 radishes, sliced into rings
  • variety of fruits such as plums, mangoes and kiwifruit, sliced or cut into wedges
  • handful of pak choi or rocket
  • fresh coriander
 

Method

1 MARINADE Mix together all the ingredients, pour over the pork strips and marinate for 3-4 hours.

2 PORK Remove the meat from the marinade, season with salt and pepper and stir-fry in a little heated oil until just done.

3 Cook remaining marinade well and pour over the meat.

4 PICKLED ONIONS In a bowl, stir the vinegar, water and sugar until dissolved. Add the peppercorns and onions and set aside to cool.

5 SALAD Arrange the ingredients on a serving plate, put the pork strips on top, pour the marinade over and garnish with pickled onions.
