Low-carb spinach and bacon tart

    cut spinach
  • 15
    olive oil
  • 1
    onion, finely chopped
  • 250
    bacon, finely diced
  • 2
    garlic cloves, finely chopped
  • a handful of fresh parsley
  • 250
    sour cream
  • 250
    creamed cottage cheese
  • 1.5
    mature cheddar cheese
  • salt and black pepper to taste



Bake in the oven at 190°C.

First off, in a saucepan, saute the spinach until wilted. Remove from pot and drain excess liquid.

Heat the olive oil and saute the onion, bacon and garlic until soft. Add the herbs and spinach. Transfer ingredients to a mixing bowl.

Add the sour cream, cottage cheese and grated cheddar. Season with salt and black pepper.

Bake for 30 – 40 minutes until set. Serve hot or cold.
