Ingredients (7)

2 bananas
3 eggs
1/2 cup nut butter
2 tsp cinnamon — ground
2 Tbs xylitol — or honey
2 Tbs almond flour
2 tsp butter — melted

Method:

Blitz all ingredients together in a blender till smooth and batter consistency.

Heat a large frying pan with some butter and a little drizzle of oil to stop the butter burning.

Once the butter starts to sizzle, spoon some spoonfuls of batter into the pan and leave to cook until bubbles start to appear over the surface. Then flip them over carefully. Keep a watchful eye as the oil in the nut butter makes them prone to burning quickly

Pat with butter and a drizzle of honey, a sprinkle of cinnamon, lemon juice, chopped banana, berries, bacon, or anything you choose.
