Ostrich pita with beetroot pickle

Ingredients (10)

BEETROOT PICKLE:
2 beetroot — medium, peeled
1 apples — Granny Smith, peeled
1 red onion — finely sliced
30 ml vinegar — apple cider
5-10 ml brown sugar
OSTRICH PATTIES:
500 g ostrich mince
150 ml breadcrumbs — white
45 ml fresh parsley — chopped
4 pita breads
rocket — or baby spinach, to serve

Method:

Beetroot pickle:
Grate or use a julienne peeler to shred the beetroot and apple. Toss well with the onion, vinegar and sugar.

Ostrich patties:
Mix the mince, breadcrumbs and parsley together well. Season with salt and pepper. Shape into large flat patties to fit into a pita bread. Grill on an oiled hot griddle pan.

Put some rocket or baby spinach into the pitas along with a patty. Top with beetroot pickle and serve.
