Ingredients (8)

100.00 ml cottage cheese — smooth, low-fat
10.00 ml french mustard
4.00 tortillas — flour or corn
8.00 pastrami — or cold roast beef, slices
1.00 baby tomatoes — halved
6.00 gherkins — chopped
6.00 piquanté peppers — chopped, optional
0.00 lettuce

Method:

Mix cottage cheese and mustard.

Spread on four tortillas.

Top each tortilla with beef strips, tomatoes, gherkins, piquanté peppers and lettuce leaves.

Season to taste with salt and freshly ground black pepper.

Roll up tortillas and cut in half.

Wrap in plastic and refrigerate until ready to pack into lunch boxes.

Delicious variations:

Chicken or turkey tortilla: Use leftover pieces of cooked chicken or strips of chicken or turkey loaf. Replace the mustard with 10 ml basil or sun-dried tomato pesto.

Tuna tortilla: Leave out the mustard and beef. Mix a can of drained tuna with 50 ml mayonnaise. Add four chopped spring onions and strips of green pepper.

Cheese tortilla: Use flavoured chunky cottage cheese with salads, or 250 ml grated Cheddar instead of the beef.
