Ingredients (14)

120 ml vegetable oil
4 onion — chopped
4 red pepper — chopped
40 ml fresh thyme
8 cloves garlic — cloves, crushed
30 ml paprika — smoked
30 ml cumin — ground
2 kg beef mince — lean
2 l stock — beef
4 tinned tomatoes — chopped
20 ml dried mixed herbs
120 ml Worcestershire sauce
180 ml tomato paste
3 red kidney beans — tinned, drained

Method:

Heat the oil in a pot and sauté the onions, red pepper and fresh thyme until translucent.

Add the garlic and spices and fry for a further 4 – 5 minutes.

Add the meat and brown well with the onions and spices.

Deglaze the pot with the beef stock and then add the tomatoes, herbs, Worcestershire Sauce Lazenby and tomato paste.

Bring the mixture up to a gentle simmer and cook for 30 minutes.

Add the kidney beans and simmer for a further 15 minutes.

Serve with sour cream, fresh coriander and cheddar cheese.
