Ingredients

  • 4*200
    g
    thick steaks
  • 3
    garlic cloves, crushed
  • 2
    ml
    chilli flakes
  • 30
    ml
    oil
  • salt and black pepper
  • 4
    crusty rolls
  • soft butter
  • watercress and baked potatoes for serving
 

Method

15 min
 

1.  Pound the steaks between sheets of clingfilm to flatten slightly.

2.  Mix the garlic, chilli flakes and oil and rub over the steaks. Season with salt and pepper.

3.  Sear the steaks in a very hot pan for 3 minutes on each side or until done to your liking.

4.  Split the rolls and moisten the cut sides with the pan juices, then top with a piece of steak and sandwich together.

5.  Butter the outside of the rolls, then transfer to a clean pan, cover with baking paper and top with a heavy pan or pot. Over low heat, slowly brown and crisp one side then flip and do the same on the other side.

6.  Serve with watercress and baked potatoes.
