Bacon-wrapped stuffing bites

Ingredients (10)

1 kg pork mince
1 onion — finely chopped
1 cup walnuts — chopped
30 bacon — streaky
1 cup breadcrumbs — fresh
lemon — zest only
1 eggs — large, yolk only
1 apples — grated
salt and freshly ground black pepper — to taste
1/2 cup fresh parsley — finely chopped

Method:

Preheat oven to 180 C.

In a large bowl, mix together the pork mince, onion, walnuts, breadcrumbs, lemon zest, apple, egg yolk, salt and pepper and parsley.

Wash your hands and use them to incorporate all the ingredients.

Lay out the bacon strips on a baking tray and using your hands, form golf-size balls of the mince mixture. Place one on a bacon strip and wrap it around the mince.
Repeat this process until you have finished all the mixture.

Bake for 20 – 25 minutes or until cooked through.

Tip: Pork should always result in a pale pink colour and not “grey” when cooked.
