Small protein pancakes

Ingredients

  • 4 bananas, peeled
  • 30
    ml
    smooth peanut butter
  • pinch of salt
  • 15
    ml
    chia seeds
  • 30
    ml
    gluten-free flour such as coconut or almond
  • 3 egg whites, whisked until fluffy
  • a little coconut oil or olive oil for frying
  • 60
    ml
    smooth peanut butter (optional)
  • 250
    ml
    plain yoghurt
  • 1 banana, sliced
  • 5
    ml
    chia seeds
  • fresh mint to garnish
 

Method

1 PANCAKES

Mash the bananas into a smooth paste and mix well with the peanut butter, salt, chia seeds and flour. Fold the fluffy egg whites into the banana mixture.

2 Heat a little oil in a non-stick pan and add 2-3 spoonfuls of pancake batter.

3 Fry over medium heat for 1-2 minutes, carefully turn over and fry until done. Remove from the pan and repeat with the rest of the batter.

4 TO SERVE

Spread more peanut butter (if using) on each pancake. Spoon a dollop of yoghurt on top and add the banana slices. Sprinkle the chia seeds over and garnish with mint
