Ham is ideal for the festive season because it can be cooked beforehand and served hot or cold. Leftovers are delicious in a sandwich.

Ingredients (12)

ham
1 ham with rind
1 onion — peeled
6 cloves — whole
2 carrots — cut into chunks
1 celery stalk — sliced
6 peppercorns — whole
bay leaves extra cloves for studding the rind
Glaze
250 ml apple juice
30 ml brown sugar
30 ml honey
5 ml ginger — ground

Method:

1. Ham calculate the cooking time according to the weight of
the ham. The cooking time is usually on the packaging but if not, cook the ham
for 30 minutes for every 500 g. cook a 4 kg ham for 4 hours. Because the ham is
glazed after being boiled then put in the oven we cook it for only 3 hours on
top of the stove and roast it for the last hour so the fatty layer becomes
deliciously crisp and golden.

2. Use a saucepan big enough to comfortably hold the ham and
cover the meat with cold water. Stud the onion with the 6 cloves and add it to
the saucepan with the carrots, celery, peppercorns and bay leaves. Cover and
bring to the boil. Reduce the heat and simmer for 3 hours. Leave the ham to
cool in the cooking liquid.

3. carefully remove the ham from the liquid, put it on a
wooden board and peel off the rind.

4. cut a diamond pattern in the fatty layer and stud each
diamond with a clove. Put the ham in a roasting pan.

5. Glaze Preheat the oven to 180 °c. Heat the glaze
ingredients in a saucepan over low heat, stirring until the sugar has
dissolved. Pour the mixture over the ham and cook for 1 hour or until the fatty
layer is crisp and golden. Baste frequently with the glaze. Remove the ham from
the oven and let it rest for 15 minutes before carving it.
