Steak cups with salsa and rocket

    rolls (500g each) puff pastry

    onion, finely chopped

    large tomato, deseeded and diced
  • ½
    cucumber, cored and diced
  • 1
    chilli, chopped (optional)
  • salt and freshly ground pepper

  • wild rocket
  • balsamic reduction

Preheat the oven to 180°C. Grease 24 muffin tin hollows with nonstick spray and dust with flour.

1.  Cut each pastry roll into 12 equal squares. Push the squares into the prepared muffin tin hollows and bake for 10-12 minutes or until golden brown. Leave to cool completely on a wire rack.

2.  Salsa Mix all the ingredients and set aside.

3.  Filling Season the steak with salt and pepper and fry for 4 minutes on each side or until done to your liking. Leave to rest on a cutting board. Slice thinly.

4.  Spoon salsa into each pastry cup, top with  1 -2 slices of steak  and scatter wild rocket on top. Drizzle a little  balsamic reduction over and serve.
