Crumbed mushrooms with chilli dip

    large brown mushrooms

    flour

    cayenne pepper salt and freshly ground pepper

    milk

    coarse breadcrumbs
  • 10

    dried chilli flakes (optional)

    grated hard Italian cheese such as pecorino (optional) oil for deep-frying

    quality mayonnaise

    plain full-cream yoghurt 1 garlic clove, crushed

    red chillies, finely chopped

    lemon juice pinch of salt
 

Method

15 minutes
 

These crumbed mushrooms make a great nibble that’s easy and quick to prepare.

1. Cut the mushrooms into 1,5cm thick slices.

2. Mix the flour and cayenne pepper and season well with salt and freshly ground pepper. Roll the mushroom slices in the mixture to coat.

3. Whisk the eggs and milk together well. In a separate bowl, mix the breadcrumbs with the chilli flakes and cheese (if using).

4. Dip the mushrooms into the egg mixture then roll in the breadcrumbs to coat. Repeat once more then arrange the mushrooms in a single layer on a plate. Chill for 15-30 minutes.

5. Heat oil for deep- frying and fry the mushrooms in batches until golden and done. Drain on paper towels.

6. Dip Mix the ingredients well. Serve with the mushrooms.
