Chicken and chorizo kebabs

Ingredients (12)

4 chicken breast fillets — cubed
1 dried oregano
lemon — zest and juice
1/2 tsp dried chilli flakes
sea salt and freshly ground black pepper
180 g chorizo sausage — sliced
SHERRY SAUCE:
1 butter
2 garlic — cloves, crushed
1 tsp paprika — smoked
lemon — squeeze
3 sherry — Spanish
olives — green, to serve

Method:

Place the chicken cubes in a bowl. Add olive oil, oregano, lemon, chilli flakes and seasoning. Mix well to combine and leave to stand for 20 minutes. Soak the kebab skewers in water.

Thread chicken cubes and sliced chorizo onto skewers. Heat a griddle pan until hot and cook kebabs until done.

For the sherry  sauce: heat butter, olive oil, garlic and paprika in a pan. Add a squeeze of lemon, cook for 1–2 minutes. Deglaze with sherry and cook for another minute. Season and pour over chicken and chorizo kebabs.

Serve with green olives.
