Whole-roasted coriander trout

  • 4
    green chillies, chopped
  • 4
    garlic cloves, chopped
  • 30
    fresh coriander, chopped
  • 4
    whole small trout, cleaned
  • juice of 2 limes
  • 2
    sesame oil
  • 2
    limes, sliced
  • sea salt and black pepper
  • fresh coriander, chopped red chilli and lime for garnishing


Preheat oven to 180°C.

Pound chilli, garlic and coriander to a chunky paste. Spread paste inside cavity of fish, top with slices of lime and close cavity.

Drizzle fish with lime juice and sesame oil; scatter with remaining lime. Season. Bake for 20 minutes.

To serve:

Serve hot, garnished with lots of coriander, chilli and lime.
