Vegetarian tacos

Ingredients

  • 1
    box of readymade hard taco shells
  • 45
    ml
    readymade salsa sauce
  • 1
    can mixed beans, rinsed and drained
  • 1
    can whole corn kernels, rinsed and drained
  • handful of fresh coriander, chopped
  • a few drops of Tabasco sauce
  • salt and freshly ground pepper
  • 200
    g
    cheddar cheese, grated
 

Method

 

1. Heat the taco shells according to the packet instructions.

2. Mix the salsa sauce, beans, corn, most of the coriander (reserve some for the garnish) and Tabasco sauce and sea-son with salt and pepper. Spoon into the taco shells, sprinkle the cheese over, garnish with the reserved coriander and serve.
