    steak
  • salt and freshly ground black pepper
  • 5
    ml
    oil
  • 250
    g
    cherry tomatoes
  • 80
    ml
    balsamic vinegar
  • 45
    ml
    sugar
  • 4
    tortilla wraps
  • 20
    g
    rocket
 

Method

Heat the oven to 230 °C. Grease a baking sheet with non-stick spray.

1 STEAK

Season the steak on both sides with salt and pepper and rub with the oil.

2 Heat a pan until very hot and seal the steak on both sides.

3 Transfer to the baking sheet and cook in the oven for 3-6 minutes.

4 Rest the steak for 5 minutes before cutting into slices.

5 TOMATOES

Stir-fry the ingredients in a pan over medium heat until the sugar has dissolved.

6 Simmer slowly until the mixture begins to thicken.

7 WRAPS

Rapidly fry the tortillas in a pan, if desired. 8 Arrange the rocket on each tortilla, followed by the steak strips, tomatoes and a little of the balsamic tomato sauce. Fold and serve.
