Pasta with pesto and mushrooms

Ingredients

    g
    fusilli
  • 30
    ml
    olive oil
  • 1 onion, sliced in half rings
  • 1 garlic clove, minced
  • 250
    g
    mushrooms, sliced
  • 1 red pepper, chopped
  • 1 quantity spinach pesto
  • Parmesan cheese shavings
  • fresh basil to garnish
 

Method

15-20 min
 

1 Cook the pasta according to the packet instructions.

2 Heat the oil in a saucepan and fry the onion and garlic until soft. Add the mushrooms and pepper and stir-fry until soft.

3 Add the pasta and pesto and mix well. Garnish with the Parmesan cheese shavings and basil.
