Turkish style spinach pizza

Spinach pizza

    bunch spinach, well washed and chopped

    grated mozzarella cheese
  • generous squeeze of lemon juice

    store-bought bread dough, at room temperature

TO FINISH 1 red onion, sliced Preheat the oven to 230°C. Grease 2 baking sheets with non-stick spray.

1 FILLING Heat the oil in a large pan and fry the onions until soft. Add the spinach and stir-fry until wilted and all the moisture has evaporated. Transfer the spinach mixture to a mixing bowl and leave to cool.

2 Mix the mozzarella cheese into the spinach. Season with lemon juice, salt and freshly ground pepper.

3 PIZZAS Divide the dough into 4 equal parts. Roll out on a lightly floured surface into ovals about 2mm thick.

4 Sprinkle the semolina (if using) on the prepared baking sheets. Arrange the dough ovals on the baking sheets and fold in the edges so the ovals resemble small boats (see the picture above). Divide the filling among the four boats, leaving the edges free.

5 Bake for 20 minutes or until the dough is golden and cooked.

6 TO FINISH Sprinkle the onion over and serve.
