Crispy pork chops

Ingredients (7)

2 Tbs butter
2 Tbs oil
4 pork — thick loin chops
4 peaches — cling
75 ml honey — runny
90 ml orange juice
TO SERVE:

Method:

Cut the cling peaches into segments. Heat the honey in a medium pot over medium-high heat, add the peaches and cook briefly, stirring, add the orange juice and simmer briefly until the peaches are just short of tender. Set aside.

Heat the oil and butter over medium to medium-high heat in a heavy bottomed frying pan. Add two pork chops and cook for 5 minutes on one side, turn over and cook for 3 to 4 minutes on the other side. Cook the other two chops in the same way.

Add the peaches and orange juice to the pan and simmer briefly to deglaze the pan, pour the peaches and sauce over the chops and serve immediately with the salad.
