Creamed spinach and bacon pasta bake

    red onion, sliced

    garlic cloves, chopped

    bacon, chopped
  • 300

    spinach, chopped
  • grated zest of 1 lemon
  • 15

    lemon juice
  • 1
    tub herb-flavoured cream cheese
  • 250
    ml
    milk or cream
  • salt and freshly ground pepper
  • 500

    penne pasta, cooked until just done but still firm
  • TO FINISH
  • 250
    ml
    grated mozzarella cheese
  • 15
    ml
    olive oil
  • handful of fresh herbs or rocket (optional)
 

Method

Preheat the oven to 200°C. Grease a medium ovenproof dish or 2 loaf tins with non-stick spray.

1. Heat the oil in a large pan and fry the onion and garlic until fragrant. Add the bacon and stir-fry until done.

2. Add the spinach, cover the pan with a lid and steam-fry for 5 minutes. Remove the lid and stir-fry until the spinach is wilted.

3. Stir the lemon zest and juice, cream cheese and milk or cream into the spinach mixture and heat. Season with salt and freshly ground pepper.

4. Pour the sauce over the pasta and mix.

5. To finish: Transfer the pasta to the ovenproof dish or loaf tins. Sprinkle the cheese on top and drizzle the olive oil over. Bake for 15-20 minutes or until the cheese has melted.

6. Sprinkle the fresh herbs or rocket over (if using) and serve.
