Taco style toasts

Ingredients (15)

1 Tbs vegetable oil
2 garlic — cloves, finely chopped
1 onion — sliced
1/2 green pepper — chopped
1 cup carrots — grated
1 Tbs cumin — ground
1 tsp fresh chillies — crushed
500 g beef mince — extra lean
60 ml tomato sauce
80 ml stock — beef
1 sea salt and freshly ground black pepper
For serving:
2 tomatoes — diced
1 cup lettuce — iceberg, shredded
125 ml mozzarella cheese — grated
1 bread — baguette, sliced and toasted

Method:

Heat oil in a frying pan. Add garlic, onion and pepper and cook for 2 minutes.

Toss in carrot and spices and cook for a further 2 – 3 minutes.

Add mince and cook until well browned. Add tomato sauce and stock. Cook for 3 – 4 minutes and season.

Serve mince, tomatoes, lettuce and cheese in bowls and allow guests to help themselves.
