Ingredients (6)

2.00 bread — soft white rolls
350.00 g calamari — rings
45.00 ml sweet chilli sauce — Thai
2.00 spring onions — optional
2.00 lettuce — iceberg or cos
0.00 lemon

Method:

Halve rolls and set aside. Preheat the grill.
Dry calamari well with kitchen towel.
Preheat a pan until hot.
Add the sweet chilli sauce and a little water.
Add calamari and stir-fry over high heat for about 4 minutes.
The sugar in the chilli sauce will caramelise, making the calamari sticky, you don’t want it to burn as it will be bitter so be careful of over cooking.
Remove from heat and season with salt.
Pop the rolls under the grill and remove when golden.
Place a lettuce leaf on the bottom half of each roll, pile high with sticky calamari, drizzle with lemon and serve with lots of paper napkins!
