Spanish chicken and chorizo casserole

Ingredients (14)

6 chicken — thighs
6 chicken — drumsticks
300 g chorizo — sliced
3 red onion — peeled and quartered
2 red pepper — deseeded and cubed
8 potatoes — peeled, quartered, boiled
15 ml cumin — ground
15 ml mustard — powder
10 ml dried oregano
30 ml paprika
15 ml garlic — cloves, chopped
salt and freshly ground black pepper
60 g olives — pitted
fresh basil — to garnish

Method:

Preheat the oven to 200.
Place the chicken pieces, the chorizo, red onions, red peppers and half-cooked potatoes into a casserole dish.
Season with the cumin, mustard powder, oregano, paprika, garlic, salt and pepper.
Pour the oil over.
Put in the oven and let cook for an hour.
Remove from oven and add the olives and basil.
Serve with fresh bread or rice or couscous.
